A stove top recipe for chicken from “Cook Simple” by Diana Henry.
Ingredients
- 15 g unsalted butter
- 1 tbsp olive oil
- 8 chicken thighs, seasoned with salt and pepper
- 2 red onions halved and cut into wedges
- 2 thin skinned oranges, unpeeled each cut into 8 wedges
- 5 garlic cloves peeled and crushed
- 1 small red chilli halved, desseded and finely chopped
- 3 tsp ground coriander
- 1 stick cinnamon
- 75 g raisins soaked in boiled water for 30 minutes, then drained
- juice of an orange
- 150 ml chicken stock
- 1 1/2 tbsps thyme honey
- a small handful mint leaves

- Heat the butter and oil in a shallow casserole and brown the chicken thighs on each side. Lift out the chicken and set aside. Add the onion and orange to the pan and saute for 2-3 minutes.
- Add the garlic, chilli, dried spices and raisins and cook for another 2-3 minutes. Pour on the orange juice, stock and honey. SEason and simmer for 10 minutes.
- Return the chicken to the pan then cover and cook over a low heat for 20-25 minutes or until the chicken is cooked through. Check the seasoning, scatter the mint over the top and serve with Greek yoghurt and rice.
