A delicious supper that only takes a few minutes to prepare from ” Cook” by Thomasina Miers. Vacherin cheese is seasonal and only available from late November to mid February making this a lovely supper for winter nights. Serve with a crisp green salad and ripe pears, apples and walnuts to eat between mouthfuls of cheese.
Ingredients
- 1 small ( 400g) Vacherin Mont d'Or
- 1 plump garlic clove halved
- a small bunch fresh thyme
- 1 bottle chilled fruity dry wine
- fresh crusty french bread to serve

Instructions
- Preheat the oven to 180 C, 160 Fan, Gas 4.
- Remove the lid from the box of the cheese and make a hole in the middle of the cheese with a teaspoon. Cram in the garlic and thyme stalks.
- Next, making more space if necessary, pour in a splash of wine. The rest is for drinking with your meal !
- Replace the lid and put in the oven. Cook for 10-15 minutes until the cheese is warmed through and thoroughly gooey.
- Serve with the wine and lots of crusty bread to scoop up the cheese, salad, apples, pears and walnuts .
