A simple but delicious salad from “Sumac ” by Anas Atassi. It goes well with most chicken and fish dishes.
Ingredients
- 225 g halloumi cut in slices 1 cm thick
- 1 small sweet ripe watermelon cut into pieces
- seeds from a pomegranate
- 4 tbsps extra virgin olive oil
- 2 tbsps pomegranate molasses
- 1 handful fresh mint leaves

Instructions
- Heat a chargrill pan on a medium heat and grill the halloumi slices for 2 minutes on each side.
- In a large bowl toss the watermelon , grilled cheese and pomegranate seeds with the olive oil and 1 tbsp of the pomegranate molasses.
- Transfer to a large serving dish , sprinkle with the mint leaves and drizzle with the remaining pomegranate molasses.
