Winter Slaw is a healthy salad for any time of year.
Ingredients
- 150 g red cabbage thinly sliced
- 1/2 red onion thinly sliced
- 2 carrots coarsely grated
- 1 apple peeled and coarsely grated
- 100 g celeriac peeled and grated
- 1 celery stick finely chopped
- 1 bunch fresh flat leaf parsley finely chopped
- 50 g toasted flaked almonds to garnish
- ready made mayonnaise
- juice of a l;emon
Servings:
Instructions
- Combine all the vegetables with the grated apple then stir in the parsley.
- Add mayonnaise and lemon juice to taste and mix in.
- Garnish with the toasted almonds.
